Caprese Salad

Ingredients
2 medium red tomatoes, cut into wedges
2 medium yellow tomatoes, cut into wedges
¾ cup fresh mozzarella, diced
3 Tbsp fresh basil, sliced
Ground pepper to taste
Directions
Gently toss tomatoes, mozzarella, and basil in large bowl. Season with pepper.

Fruit Salad with Cinnamon Chips

Ingredients
4- 8 inch whole wheat tortillas
Spray margarine (ex. I Can’t Believe It’s Not Butter Spray)
1 Tbsp sugar
¼ tsp ground cinnamon
1 pear, cored & diced
1 mango, peeled & diced
1 cup diced strawberries
1 plum, diced
Directions
Preheat oven to 350°F. Lightly spray both sides of each tortilla with spray margarine. In a small bowl, stir together sugar and cinnamon; sprinkle over tortillas. Cut each tortilla into 8 wedges & arrange on two ungreased baking sheets. Bake for 5-7 minutes or until crisp. Cool completely.
Combine remaining ingredients in medium bowl. Chill then serve with cinnamon chips.

Melon Kabobs with Poppy Seed Dressing

Servings Per Recipe: 12 (1 serving = 2 skewers + 1 Tbsp dressing)
Ingredients
½ cup plain nonfat yogurt
1½ Tbsp lime juice
1½ Tbsp honey
1 tsp poppy seeds
1 honeydew melon, halved & seeded
1 small seedless watermelon, cut into ¾” thick slices
24 6-inch bamboo skewers
Directions
In medium bowl, whisk together yogurt, lime juice, honey, and poppy seeds. Cover & refrigerate.
Using large melon-baller, scoop out 72 balls from the honeydew melon.
Using 1 ¼” cookie-cutter, cut out 48 pieces from the watermelon.
Alternate 3 honeydew balls & 2 watermelon shapes on each skewer. Serve kabobs with chilled dressing.

Peanut Butter, Blueberry & Banana Sandwich

Ingredients
1 whole wheat English muffin
2 Tbsp peanut butter
15 blueberries, washed & dried
1/3 banana, peeled & sliced
Directions
Toast English muffin.
Spread 1 Tbsp peanut butter on each half of the muffin.
Add blueberries then banana slices to the bottom half. Place the other half of the muffin on top & enjoy.
