Caprese Salad

Ingredients
  • 2 medium red tomatoes, cut into wedges
  • 2 medium yellow tomatoes, cut into wedges
  • ¾ cup fresh mozzarella, diced
  • 3 Tbsp fresh basil, sliced
  • Ground pepper to taste
Directions
  1. Gently toss tomatoes, mozzarella, and basil in large bowl. Season with pepper.

Fruit Salad with Cinnamon Chips

Ingredients
  • 4- 8 inch whole wheat tortillas
  • Spray margarine (ex. I Can’t Believe It’s Not Butter Spray)
  • 1 Tbsp sugar
  • ¼ tsp ground cinnamon
  • 1 pear, cored & diced
  • 1 mango, peeled & diced
  • 1 cup diced strawberries
  • 1 plum, diced
Directions
  1. Preheat oven to 350°F. Lightly spray both sides of each tortilla with spray margarine. In a small bowl, stir together sugar and cinnamon; sprinkle over tortillas. Cut each tortilla into 8 wedges & arrange on two ungreased baking sheets. Bake for 5-7 minutes or until crisp. Cool completely.
  2. Combine remaining ingredients in medium bowl. Chill then serve with cinnamon chips.

Melon Kabobs with Poppy Seed Dressing

Servings Per Recipe: 12 (1 serving = 2 skewers + 1 Tbsp dressing)

Ingredients
  • ½ cup plain nonfat yogurt
  • 1½ Tbsp lime juice
  • 1½ Tbsp honey
  • 1 tsp poppy seeds
  • 1 honeydew melon, halved & seeded
  • 1 small seedless watermelon, cut into ¾” thick slices
  • 24 6-inch bamboo skewers
Directions
  1. In medium bowl, whisk together yogurt, lime juice, honey, and poppy seeds. Cover & refrigerate.
  2. Using large melon-baller, scoop out 72 balls from the honeydew melon.
  3. Using 1 ¼” cookie-cutter, cut out 48 pieces from the watermelon.
  4. Alternate 3 honeydew balls & 2 watermelon shapes on each skewer. Serve kabobs with chilled dressing.

Peanut Butter, Blueberry & Banana Sandwich

Ingredients
  • 1 whole wheat English muffin
  • 2 Tbsp peanut butter
  • 15 blueberries, washed & dried
  • 1/3 banana, peeled & sliced
Directions
  1. Toast English muffin.
  2. Spread 1 Tbsp peanut butter on each half of the muffin.
  3. Add blueberries then banana slices to the bottom half. Place the other half of the muffin on top & enjoy.
